DDWELC meal #7
We're big on leftovers here. It's prudent, it's frugal and it reduces waste. And it can be fun turning odds and ends from other meals into something wonderfully new. I know, I know. Turkey potpie doesn't sound all that exciting, does it? When you're a wintered-in country girl, you take what you can get, okay?! :)
I used Joy of Cooking to make this pie, with a few adaptations, of course. If you're looking for a recipe, check out katie's post. Her individual potpies look yummy!!

This is a great idea for the left over dark meat that we don't really like for sandwiches. I'll have to try it next year. We aren't big turkey fans here unfortunately.
Okay, I am in the middle of packing and totally starving. Then I see this. AHHHHHH...it looks so good. I could eat that whole thing!

christy-yes, it was an excellent use of the dark meat. We're not big fans of dark meat either, but I have to say, the heritage turkey's dark meat was really tasty!

Wow, that looks good! I usually make a chicken pot pie, but with biscuits on top instead of a pie crust. Because I'm afraid of pie crust, or rather, afraid of the results when I make it :)
